The winds of India’s Malabar coast give this unique raw single-origin coffee its provenance. The journey of this raw/green coffee begins at 4000 feet (1220 meters) above sea level, on our family’s own estates Once the perfect Fair Trade coffee cherries have been hand-picked, pulped, naturally fermented and are then hand stored in huge open-sided warehouses, where the regional monsoon rains swell the coffee and bring out the incredible internal flavours over several months. This method also lowers the PH to a neutral level, making it an ideal specialty coffee canvas for the artistic touch of the DIY coffee roaster.
